Yogurt-filled Raspberries
This is a simple recipe that you can make and eat right away or refrigerate for later. You don't need any fancy tools to fill the raspberries. Use a ziplock bag and fill with vanilla greek yogurt. Cut one of the corners and start filling your raspberries. That's it. Pretty simple. If you want to get even fancier, drizzle some honey over the top for extra sweetness. This will surely curb your sweet tooth.
Watermelon Fries with Coconut Lime Dip
Simple and tasty is the way we like to do it here. Everyone is sure to love this recipe. Cut your watermelon into thin, fry-like shapes, sprinkle Tahin on top, and set aside.
Combine coconut yogurt, freshly squeezed lime juice and honey. Top with minced mint leaves for added flavor.
1 large watermelon
Tahin to taste
1 1/2 cup coconut yogurt
1 lime, freshly squeezed
2 tsp honey
10 mint leaves, minced
Fruit Kebab
Any type of kebab is welcome, but for now, we'll focus on a summery, easy, and healthy snack. Choose your favorite fruits that can be skewered. Avoid using small fruit like pomegranates because you won't be able to put the stick through them. Anything like bananas, watermelon, grapes, pineapple, kiwis, and honeydew will work. Refrigerate after you've skewered them, so they're nice and cold before you present them to guests.
You could use disposable skewers like these or invest in metal skewers like these to recreate this and any other kebab in the future.
Thai Cucumber Salad
Cucumber is one of the most refreshing veggies that you can eat in the summer. It's full of nutrients and promotes hydration, and it tastes delicious. This cooling salad is a great midday snack to have after lunch and before dinner. It's light and flavorful, and it'll hold you over until dinner time. Here's what you'll need:
2 large cucumbers, thinly sliced or 6 Persian cucumbers, thinly sliced
3 green onions
1/4 cup roughly chopped peanuts or almond
1/3 cup rice vinegar
1/2 tsp toasted sesame seed oil
2 tsp granulated sugar
1/4 tsp red chili flakes
1/2 tsp salt
1/2 tsp black sesame seeds
Mix everything and chill in the refrigerator until you're ready to eat it.
Being mindful of the summer snacks you have around the house is a great way to keep your health goals in mind. It's essential to enjoy the foods you consume so you can maintain a fit and healthy lifestyle year-round. A cheat meal here and there is fine, but you'll be happier knowing you're making the best snack choices for you and your family.
