Pumpkin pie

This is a classic recipe you can’t miss.

Ingredients:

  • 1 almond flour pie crust
  • 1/2 cup heavy whipping cream
  • 1 15-oz can pumpkin puree
  • 2 large eggs
  • 2/3 cup powdered erythritol
  • 2 tsp pumpkin pie spice or gingerbread spice
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Steps:

1. your almond flour crust.

2. Mix all ingredients.

3. Pour filling on top of the crust.

4. Bake at 325°F for 40-50 minutes.

5. Let the pie cool for one hour before serving or place it in the refrigerator.

Praline no-bake cookies

Who says you need an oven to create delectable cookies?

Ingredients:

  • 1/2 cup heavy whipping cream
  • 4 Tbsp unsalted butter
  • 1/2 cup xylitol
  • 1 Tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 cup unsweetened shredded coconut
  • 1 cup chopped pecans

Steps:

1. In a large saucepan, melt heavy whipping cream, butter, xylitol, and coconut oil.

2. Bring to a low boil and simmer for 10 minutes.

3. Remove from heat and add vanilla, shredded coconut, and chopped pecans.
Scoop onto a parchment-lined cookie sheet and chill in the freezer until firmly set.

Gingerbread loaf cake

The holiday season is not complete without gingerbread.

Ingredients:

  • 1/2 cup butter, room temperature
  • 1/2 cup erythritol sweetener, like Swerve
  • 4 large eggs
  • 1/4 cup coconut flour
  • 3/4 cup almond flour
  • 2 Tbsp psyllium husk powder
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 cup water
  • Cream Cheese Frosting

Steps:

1. Preheat the oven to 350°F. Grease a 9" loaf pan and line with parchment paper.

2. In a large mixing bowl, cream the butter and sweetener together until light and fluffy. Add the eggs, one at a time, and mix well to combine.

3. In another mixing bowl, stir together the almond flour, coconut flour, psyllium husk powder, baking powder, ginger, cinnamon, nutmeg, cloves, and salt. Break up any lumps of almond flour or coconut flour.

4. Add the dry ingredients to the wet ingredients and stir to combine. Add the water and stir until smooth.

5.Spoon the batter into the prepared loaf pan. Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
